Bellissimo Cauliflower Crust Pizza
1000g frozen cauliflower
1 pastured egg
salt + pepper
1/2 tsp turmeric powder
1/2 tsp dried basil
½ cup tomato sauce
1 slice bacon
16 slices, pepperoni
5 kalamata olives, slice
1 tbsp olive oil
The night before, take frozen cauliflower out of the freezer and leave in the fridge to thaw out.
Preheat oven to 200c. Line a large bowl with a clean tea towel and set aside. Working in batches, add cauliflower to food processor or high speed blender and blend until it is about the size of rice. Transfer cauliflower “rice” to the lined bowl.
Once all the cauliflower has been added to the bowl, wrap it in the tea towel, twist at the top and squeeze out the excess moisture. Transfer the cauliflower to another bowl.
Add egg, salt and pepper and spices to the cauliflower and mix through. Press the mixture out onto a baking sheet lined with parchment paper. Use your hands to press down and form a crust around the edges.
Put crust in preheated oven for 35-40 minutes, or until it starts to get crispy and golden.
Remove from oven and spread the tomato sauce evenly across the pizza crust. Add all toppings, saving the cheese for last and then drizzling olive oil on top. Put pizza back in the oven for another 10-15 minutes, or until the cheese is golden and bubbly.
Remove from oven, slice up and enjoy. Keep the leftovers for lunch the following day.
